Camping Recipe: Campfire Grilled Fajitas

Ingredients

  • ΒΌ cup freshly squeezed lime juice
  • 2 tbsp of olive oil
  • salt, to taste
  • 4 minced cloves of garlic
  • 1 tsp of cumin
  • 1 lb. flank or skirt steak sliced into thin strips
  • 1 sliced onion
  • 1 chopped red bell pepper
  • 2 diced jalapeno peppers
  • aluminum foil
  • 1 chopped bunch of cilantro
  • 1 chopped avocado
  • shredded cheese of your choice

Instructions:

  1. Mix the lime juice, olive oil, salt, garlic, and cumin in a ziplock bag. 
  2. Add the meat and allow it to marinate in your refrigerator for at least an hour.
  3. Prepare the onion, red bell pepper into strips, and jalapeno peppers, and store them in a separate container.
  4. After an hour, place meat and vegetables on a large sheet of heavy-duty aluminum foil and wrap them neatly. Add at least two more layers of aluminum foil. Wrap it well to keep moisture from leaking out.
  5. Place your foil packages on your camp stove. Cook them on medium heat for about 10 minutes.
  6. Turn them over, then cook them for another 10 minutes on the other side.
  7. Remove from heat and let rest for five minutes.
  8. Open packs and serve on tortillas with fresh cilantro, avocado, sour cream, and cheese to taste. Wrap your fajitas and enjoy!
